Fifth Street Brewpub hires former Carillon Brewery brewmaster

Tanya Brock, who served as the head brewer for Carillon Brewing Co. for more than two years until June 2016, has been hired as general manager of Fifth Street Brewpub.

“I love beer, food and history. More than that, I love the way these things are a way to bring people together,” Brock told us this morning. Fifth Street Brewpub, she said, “is a unique place that aligns with my previous experiences and skills. The role it plays in connecting and revitalizing the St. Anne’s Hill Historic District speaks volumes to the building’s rich past and the organization’s modern story of being a contributing neighbor.”

Brock, who joined Dayton History’s staff in August 2013 to design and open Carillon Brewing Co., pointed to the weekly Guest Bartender nights that raise money for local non-profit organizations as a “key indicator that this is a place that is bigger than itself. It is one that genuinely cares about the community and actively supports its growth.” She also praised the brewpub’s “super-talented brew team, trained and creative kitchen staff, and fun-loving service staff.”

FSB, which opened in 2012, is Ohio’s first co-op brewery. It is open to the public.

Tony Clark, president of FSB’s board of directors, said this morning that Brock’s experience at Carillon Brewing Co. “makes her an ideal fit for our Co-Op.

“Not only does she have the perfect mix of management and brewing experience, she also has a passion for preservation, history and community development. Her passions align perfectly with our mission as a not-for-profit brewpub. We are all very excited to see how our brewpub grows and evolves under her skillful management.”

In July, Fifth Street Brewpub captured more medals than any other brewery in Ohio in the 2016 U.S. Open Beer Championship. FSB won gold medals for its Jo-Jo's Midnight Stout in the American Stout category, and for BA Scottish Reign in the Wood/Barrel-Aged Strong Scotch category, as well as a bronze medal for its Coffee Kolsch in the Coffee Beer category.
